Easy Vanilla Ice Cream
Ingredients
6 egg yolks
200g caster sugar
500mL milk
300mL double cream
1 vanilla bean
Instructions
Split bean, Place in a pan with the milk over medium heat, Stir until it simmers. Remove from heat, Scrape seeds into milk and allow to cool slightly. Meanwhile, cream yolks and sugar until creamy and pale. Add the milk and whisk through.
Cook gently in a double boiler (if you don’t have one, place a bowl in a pan of water on one of those clever little stands that sit in the bottom of the saucepan), stirring constantly until it coats the back of a spoon. Do not allow the egg to curdle. Pour through a sieve and allow to cool.
Mix cream through cooked custard. Churn in an ice cream maker and freeze overnight.
Variations
Melt 300g of shaved dark chocolate into the milk as you heat.
or
Add pureed fruit, cooked down with sugar syrup. Put it through the mix before churning. Try mango or berries or peaches.
